The happy life of a happy wife…

{February 25, 2011}   Five Question Friday

1. Can you drive a stick shift?  Yup!  I love having a manual transmission  🙂

2. What are two foods you just can’t eat?  Seafood or tripe

3. Do you buy Girl Scout Cookies? What is your favorite kind?  My favorites are tagalongs, samoas, and thin mints…  and I do usually buy several boxes each year  🙂  But now all of my little friends are growing up and I need a new little Girl Scout friend.

4. How do you pamper yourself?  Probably just by waking up early on the weekends and watching all of the week’s Real Housewives episodes.  ❤ it!

5. What is your nickname and how did you get it?  I have a few, but I’m not sharing the one Shane gave me lol

You’re going to have to trust me on this one, because the pictures are terrible!  Terrible pictures = Good tasting food.  At least on my blog 🙂

Ingredients:

  • Bread
  • Mayonnaise
  • Deli Ham
  • Deli Turkey
  • Muenster cheese
  • 1 egg
  • 1/2 cup milk

Notes:

  • 1 egg & 1/2 cup milk is enough for 2 sandwiches.

Directions:

  1. In a small bowl, beat egg and milk.  Set aside.
  2. Spread mayo on the bread.
  3. Alternate Ham -> Turkey -> Cheese -> Ham -> Turkey -> Cheese
  4. Coat the sandwich in the egg mixture.
  5. Heat a greased skillet over medium heat and brown the sandwich on both sides.
  6. Serve immediately.

Lots of mayo

Assembled sandwich

Cooking it up

Yummy!

It doesn’t look like much, but it’s a nice little twist on a plain sandwich 🙂

I’d also like to share this recipe:  Baked Apples with Maple Walnut Sauce

It’s an old one but a good one, and I’ve been craving it lately!!

{February 16, 2011}   Cookie Chicken

I shouldn’t have to tell you this, but I’m going to anyways —  this recipe is for the dogs!  😉

Though it may not look very appetizing, Milly and Daisy LOVED it!  Instead of breadcrumbs, use crushed up dog biscuits!  I bought the cheap, generic ones — and tried to convince myself that the ugly, green biscuits would look like herbs to the dogs.  And since Milly calls her dog biscuits “cookies” I thought it was a fitting name for her birthday dinner!

My food processor rebelled, but these crumbs were small enough.

Ingredients:

  • 1-2 eggs, beaten
  • dog biscuits, finely chopped.
  • boneless, skinless chicken breast strips

Directions:

  1. Preheat the oven to 375 degrees F
  2. Put the eggs in one small dish and the dog biscuits in another.
  3. Dip the chicken tenders in the eggs and then the biscuits.  Push down to really get them stuck on.  Transfer to a baking sheet.
  4. Bake for 15 minutes, rotate pan, bake for another 10 minutes.

Notes:

  • I don’t like to give my dogs food that’s hot from the oven, so make sure it has cooled down a bit before serving.

{February 15, 2011}   Happy Birthday Milly

It was love at first sight, and we thought you were so adorable in your adoption picture

I'm glad they didn't tell us how carsick you get, because even though you ruined the backseat on the drive home I wouldn't have wanted to have second-thoughts about you for a second!

You love to eat

and eat and eat and eat and eat

Always with a smile on your face

... a smile that grows...

... until you can't hold it in anymore

You're my little baby girl and we love you very much

... even though your head is small. Happy 3rd Birthday Milly!

3. Do you tell your kids about things you did growing up?  Don’t have any kids yet, but I’m sure I will when I do.

4. If the traffic signal turns yellow, do you stop or speed up?  Speed up!

5. What’s your preference: chocolate or chips?  Chocolate chips — straight from the bag  🙂
